St Dalfour-Inspired Madeleines

These delicate French sponge cakes are soft, buttery, and subtly infused with the sweet, fruity flavor of St Dalfour jam. Using the jam to flavor water gives the Madeleines a natural orange essence, making them a light, fragrant treat for any time of day.Ingredients (makes ~12 Madeleines)
- 2 large eggs
- 75 g (1/3 cup) granulated sugar
- 1 tsp St Dalfour orange jam, mixed into 1 tsp warm water
- 100 g (3/4 cup) all-purpose flour
- 1 tsp baking powder
- 80 g (6 tbsp) unsalted butter, melted and cooled slightly
- 2 tbsp milk
- Optional: zest of 1 orange
- Butter and flour for greasing the molds

Instructions
- Prepare the pan: Preheat oven to 190Β°C (375Β°F). Butter and lightly flour the madeleine pan.
- Infuse the water with jam: Mix 1 tsp St Dalfour orange jam with 1 tsp warm water until smooth.
- Whisk eggs and sugar: In a bowl, whisk together eggs, sugar, and jam-water until pale and slightly fluffy (2β3 minutes).
- Fold in dry ingredients: Sift together flour and baking powder, then gently fold into the egg mixture.
- Add butter and milk: Gradually fold in melted butter and milk until smooth. Add orange zest if using.
- Rest the batter: Cover and refrigerate 30β60 minutes to help create the signature βhump.β
- Fill the molds: Spoon batter into the prepared pan, filling each mold about ΒΎ full.
- Bake: Bake 10β12 minutes, or until golden and springy to touch.
- Cool and serve: Remove from pan immediately, cool on wire rack, dust with powdered sugar if desired.
